In 1966, the International Egg Commission established the second Friday in October as World Egg Day. As you celebrate, make sure you purchase eggs from a refrigerated case, choose eggs with cl ean, uncracked shells, check the date and look for the USDA grade shield. Make sure you keep your eggs refrigerated and make sure you cook your eggs thoroughly. You’ll probably eat all your eggs in the first setting, but if there are leftovers, promptly refrigerate them and eat within two to three days.
